This crusted cheese is made only from organic, activated cashews. The cashews are fermented and then seasoned with nooch and pink Himalayan salt, after which it is allowed to mature for 4 weeks. By this time a perfect thin crust forms and the center is creamy and spreadable. At 8 weeks, the wheel has developed a beautiful texture that makes it sliceable and you can cut it into cubes too. A great way to enjoy this wheel is to slice it over sourdough or any other breads, pair it with wine or cube it into salads. You can even melt it into a sauce for pastas and gratins.
