This salad dressing is an amazing combination of flavours that is not only delicious and super easy to throw together but its also great for your gut. The apple cider vinegar fires up your digestion and the fresh garlic is naturally anti-bacterial. While the mustard and the spices round this out into a delightful dressing that can be used for almost any salad. Try it out, this one will become a staple around your kitchen.
1/2 C Olive Oil (extra virgin is best)
1/3 C Apple Cider Vinegar
2 tbsp Mustard
3 cloves of Garlic (smashed)
1 tsp mixed Italian herbs (this can be anything from an Italian herb mix to some basil and oregano, you can even use fresh herbs here if you like.
1 tsp sea salt
Place all of your ingredients into a jar with a lid. Put the lid on and shake well. Pour over any salad. This can be just lettuce leaves or you can add some roasted veggies, grilled chicken or tofu- the variations are endless with this dressing. You could even use it to flavour a buddha bowl of roasted veggies.
If you make a large batch, you can store it in a sealed jar in the fridge for up to a week and take it out each time you have a salad.
